Red Velvet Cake

This GF Red Velvet Cake is perfect for any occasion, whether it be Valentine's Day, a birthday, or anniversary. The red of the cake is deep and rich with a moist and fluffy crumb that is truly decadent!

Ingredients
  

  • 2 cups Sun Flour Mills Pastry Flour
  • 1 1/2 cups white sugar
  • 3 Tbsp cocoa
  • 1 tsp xanthan gum
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup oil
  • 1 oz red food coloring
  • 4 large eggs
  • 1 1/2 cups dairy-free milk or milk
  • 2 tsp vanilla extract
  • 2 tsp lemon juice

Instructions
 

  • In a large bowl sift together Sun Flour Mills Pastry Flour, sugar, cocoa, xanthan gum, baking powder, baking soda, and salt
  • To the dry ingredients add oil, food coloring, eggs, half of the milk, and vanilla extract
  • In a separate bowl mix half of the milk and lemon juice and let sit for 3 minutes before adding to the rest of the ingredients
  • Mix all on high speed for 2 minutes
  • Spray 2 pans with non-stick spray
  • Bake at 350 degrees in two 8x8inch cake pans for 20-25 minutes
