Red Velvet Cake
This GF Red Velvet Cake is perfect for any occasion, whether it be Valentine's Day, a birthday, or anniversary. The red of the cake is deep and rich with a moist and fluffy crumb that is truly decadent!

- 2 cups Sun Flour Mills Pastry Flour
- 1 1/2 cups white sugar
- 3 Tbsp cocoa
- 1 tsp xanthan gum
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup oil
- 1 oz red food coloring
- 4 large eggs
- 1 1/2 cups dairy-free milk or milk
- 2 tsp vanilla extract
- 2 tsp lemon juice
In a large bowl sift together Sun Flour Mills Pastry Flour, sugar, cocoa, xanthan gum, baking powder, baking soda, and salt
To the dry ingredients add oil, food coloring, eggs, half of the milk, and vanilla extract
In a separate bowl mix half of the milk and lemon juice and let sit for 3 minutes before adding to the rest of the ingredients
Mix all on high speed for 2 minutes
Spray 2 pans with non-stick spray
Bake at 350 degrees in two 8x8inch cake pans for 20-25 minutes
