PREHEAT oven to 350°F. Spray a 9 x 5 inch bread loaf pan with non-stick spray.
COOK bacon until crisp and chop.
COMBINE bananas, vanilla extract, eggs, peanut butter and sugars in a medium bowl. Mix well. Add in milk and mix.
In another large bowl combine Sun Flower Mills All Purpose Gluten Free Flour, xanthan gum, baking powder, salt and oats.
ADD in banana mixture and stir until just moistened. Stir in peanut butter chips and crumbled bacon.
PLACE mixture in prepared loaf pan. Bake for 70-80 minutes until a toothpick inserted in the middle comes out clean. Let bread cool in a pan for 10 minutes, then turn out on a wire rack.
