If you read the ingredients in this Rock and Roll Banana Bread you will be intrigued by the combination of flavors – peanut butter, bacon, banana, etc! We couldn’t wait to try out this recipe that was submitted into our baking contest. We were pleasantly surprised by the amazing flavors, execeptional moistness, and heartiness. This banana bread could be a whole breakfast meal in itself! 

***We made ours egg-free to see what would happen, and skipped out on the peanut butter chips since we didn’t have any that were dairy-free. Check out all of our substitutions below.

Alternatives

Dairy-Free:

To make this banana bread completely dairy-free use a dairy-free peanut butter baking chip, like Davis Chocolate Peanut Butter Chips. The rest of the recipe is 100% dairy-free.

Egg-Free: 

With a few simple replacements you can make this bread egg free.

To the dry ingredients add:

3/4 tsp baking soda

After everything is mixed together (the wet, dry, bacon, etc) mix in 1 tbsp vinegar, fill your pans, and bake.

Vegan: 

If you want to make this bread completely vegan, replace the bacon with a vegan bacon alternative, or just omit. *Follow instructions to make egg/dairy-free too.*

Peanut/nut free: 

Replace peanut butter with your favorite nut butter alternative (Sunbutter/ Soy-based butter). Exclude peanut butter baking chips.

 

This Rock and Roll Banana Bread is extremely hearty with the addition of oats and bacon. Try it out as breakfast muffins for a breakfast that will keep you full all morning.

Rock and Roll Banana Bread

Looking to spice up your basic banana bread? This banana bread will rock your world with all the added flavors.
Cook Time 1 hour 20 minutes
Servings 1 loaf

Ingredients
  

  • 2 ½ cups Sun Flour Mills Whole Grain Flour
  • 1 ½ cups mashed ripe bananas (about 2-4 bananas)
  • ½ tsp vanilla extract
  • 2 eggs
  • ¼ cup creamy peanut butter
  • ¼ cup granulated sugar
  • ½ cup brown sugar
  • ¾ cup unsweetened almond milk or milk of choice
  • 1 tsp xanthan gum
  • 3 ½ tsp baking powder
  • ¾ tsp salt
  • 1 ¼ cup gluten free oats
  • 11 oz package peanut butter chips
  • 6 slices cooked bacon, crumbled

Instructions
 

  • PREHEAT oven to 350°F. Spray a 9 x 5 inch bread loaf pan with non-stick spray.
  • COOK bacon until crisp and chop.
  • COMBINE bananas, vanilla extract, eggs, peanut butter and sugars in a medium bowl. Mix well. Add in milk and mix.
  • In another large bowl combine Sun Flower Mills All Purpose Gluten Free Flour, xanthan gum, baking powder, salt and oats.
  • ADD in banana mixture and stir until just moistened. Stir in peanut butter chips and crumbled bacon.
  • PLACE mixture in prepared loaf pan. Bake for 70-80 minutes until a toothpick inserted in the middle comes out clean. Let bread cool in a pan for 10 minutes, then turn out on a wire rack.
