Yellow Cake
Ingredients
- 2 cups Sun Flour Mills Pastry Flour
- 1 cup white sugar
- 1 tsp xanthan gum
- 2 tsp baking powder
- 1 tsp baking soda
- 3 Tbsp dry instant vanilla pudding mix
- 3/4 cup oil
- 3/4 cup water
- 4 large eggs
- 2 tsp vanilla extract
- Optional: 1 tsp almond extract
Instructions
- In a large bowl sift the Sun Flour Mills Pastry Flour, sugar, xanthan gum, baking powder, baking soda, and vanilla pudding mix.
- To the dry ingredients add oil, water, eggs, and vanilla and almond if desired
- Mix on low speed for 2 minutes
- Spray 2 pans with non-stick spray or prepare cupcake tins as desired
- Bake at 350 degrees for 20-25 minutes for cake pans, or 15-20 minutes for cupcakes

Yields 2 8 inch rounds or 30 cupcakes
Vanilla pudding mix??? What can be substituted. Why?
