Lemon Cake

Ingredients
  

Dry ingredients

  • 2 cups Sun Flour Mills Pastry Flour
  • 2 tsp baking powder
  • 1 1/2 tsp xanthan gum
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 Tblsp instant vanilla pudding mix dry
  • 1 cup white sugar

Wet ingredients

  • 1/4 cup lemon juice
  • 2 Tblsp finely grated lemon peel
  • 1/2 cup water
  • 3/4 cup oil
  • 4 large eggs
  • 2 tsp vanilla extract

For frosting

  • 8 oz cream cheese at room temp
  • 1/2 cup butter at room temp
  • 2 cups powdered sugar
  • 2 tsp finely grated lemon peel
  • 1 tsp vanilla extract

Instructions
 

  • Sift dry ingredients
  • Add wet ingredients one at a time
  • Beat on Low speed for 2 minutes
  • Bake at 350 degrees for 15-20 minutes
  • For frosting: in a mixing bowl beat ingredients on high speed with hand or stand mixer for 2-3 minutes until right consistency
  • Frost cupcakes or cakes

Notes

Yields 24 cupcakes or 2 8" rounds
