Dry ingredients
  1. 2 cups Sun Flour Mills Pastry Flour
  2. 2 tsp baking powder
  3. 1 1/2 tsp xanthan gum
  4. 1 tsp baking soda
  5. 1 tsp salt
  6. 3 Tblsp instant vanilla pudding mix (dry)
  7. 1 cup white sugar
Wet ingredients
  1. 1/4 cup lemon juice
  2. 2 Tblsp finely grated lemon peel
  3. 1/2 cup water
  4. 3/4 cup oil
  5. 4 large eggs
  6. 2 tsp vanilla extract
For frosting
  1. 8 oz cream cheese at room temp
  2. 1/2 cup butter at room temp
  3. 2 cups powdered sugar
  4. 2 tsp finely grated lemon peel
  5. 1 tsp vanilla extract
Instructions
  1. Sift dry ingredients
  2. Add wet ingredients one at a time
  3. Beat on Low speed for 2 minutes
  4. Bake at 350 degrees for 15-20 minutes
  5. For frosting: in a mixing bowl beat ingredients on high speed with hand or stand mixer for 2-3 minutes until right consistency
  6. Frost cupcakes or cakes
Notes
  1. Yields 24 cupcakes or 2 8" rounds
