  1. 1 prepared recipe shortbread cookie dough
  2. 3 eggs
  3. 1/2 cups white sugar
  4. 2 Tbsp cornstarch
  5. 1/4 cup lemon juice
  6. 1/2 cup powdered sugar (for decoration)
  1. Prepare shortbread cookie dough recipe as directed
  2. Preheat oven to 375 degrees
  3. Grease a 9x13 inch baking pan
  4. Put the shortbread cookie dough into the pan and press to spread
  5. Bake for 10 minutes
  6. While crust is baking, whisk together eggs, sugar, cornstarch, and lemon juice until frothy
  7. Pour lemon mixture over the hot crust
  8. Return pan to oven and bake for an additional 20-25 minutes or until light brown
  9. Cool and dust with powdered sugar
