Ingredients
  1. 1 1/2 cups Sun Flour Mills Pastry Flour
  2. 3/4 cup white sugar
  3. 1/2 tsp salt
  4. 2 tsp baking powder
  5. 1 tsp xanthan gum
  6. 1 large egg
  7. 1/3 cup vegetable oil
  8. 2/3 cup water or milk
  9. 1 cup fresh blueberries
For sweet topping
  1. 1/2 cup white sugar
  2. 1/3 cup Sun Flour Mills Pastry Flour
  3. 1/4 tsp xanthan gum
  4. 1 1/2 tsp ground cinnamon
  5. 1/4 cup dairy free margarine or butter
Instructions
  1. In a large mixing bowl whisk Sun Flour Mills Pastry Flour, sugar, salt, baking powder, xanthan gum
  2. Stir in egg, oil, and milk
  3. Gently fold in blueberries
  4. Divide evenly between 12 muffin tins. Fill dough to the top of the muffin tin
  5. If sweet topping is desired, mix sugar, SFM Pastry Flour, xanthan gum, and cinnamon, then cut in butter and divide over muffins
  6. Bake at 400 degrees for 20-25 minutes
